Your kitchen is similar to mine. I just went up to the bottom of the vent hood, because I thought it would look weird going all the way up to the ceiling when I have a space of 11" between the cabinets and ceiling. I don't care for the look of going up to the top of the cabinets and stopping there.

I think doing a herringbone under the window will look odd because it looks like you will only have one row of full tiles.

you should really take off the 4" piece you have. it's severely cutting into the space needed to carry out a herringbone. you might consider doing 3x6 or the 2x4 mosaic herringbone on the sheets. and with that 4' piece, it will look funny sitting atop of that. too much going on. look at both pics above, no 4" piece. the first one is 3x6, the 2nd pic is 2x8. that pattern is difficult to lay in a cramped space and you can't appreciate the pattern when it's squashed. Plus, you have all those outlets which will further interrupt the pattern. so either remove it or pick something else.

I like to see the tile go up to the top of the cabinet, just above the hood (like 1st pic) some like to stop right at the vent hood. up to you.

oh ok. perfect! then your 2x8 will work fine. I like to see it above the hood because I think it looks like you ran out of tile when stopped halfway! ditto for the window. take it up the top of the cabinets. again, personal choice. while he's laying them, you can have him stop at the lower points and see if you like it. if not, have him keep going (provided you got enough tile. and with herringbone, you need to order 15% more because of the cuts that are needed)
