Canning frozen tomatoes is a common practice and you can find many discussions here about it covering the pros (easy peeling) and cons (softer texture).

As for directions when canning there are primarily only 2 when it comes to canning for beginners - the Ball books and NCHFP. You will find many directions online but many of them are also unsafe to use and food safety is the first rule in canning.

By a canner I assume you mean a boiling water bath canner or do you have a pressure canner?
