I would just put a piece of whatever you are using for your counter over that and leave it alone. You don't want to compromise your waterproofing under that.

I think you have way too many different tiles in this space and please delete your duplicate post.

I would use white grout on the walls and shower floor to make it all less busy. If you still don't like it, use Sophie's threshold idea.
