Dish soap, salad dressing and anything acidic will eat away at the finish, if, not cleaned right away. It's actually high maintenance for kitchens. You can protect wet areas with waterproof floor mats. That will reduce some of the maintenance.

G&S Floor Service, I was reading about a hard wax oil finish on hardwood floors in the kitchen and saw your comment from April 28, 2017 that dish soap, salad, dressing, and anything acidic will eat away at the finish. I believe that is what has happened in several spots in my kitchen. Does it look "bleached out" when any of these items have been spilled/dripped on a hard wax oil finish? If so, is there a way to touch up? Thanks for any recommendations.

You will have a dark spot. You can try using a mfg. specified cleaner or soap to rub it out. Otherwise, you will need to spot sand and re-oil.

They aren't dark spots. Just bleached out, lighter, spots. Could water spots do this?

Yes, water can leave white spots, if, it sits there for a long period of time. If, you are not able to remove the spots with the mfg. recommended cleaner. Use a soft cloth with a little mineral spirit to buff out, then re-apply oil.

Mary Elizabeth, I have a Regal Hardwood floor that is finished with a hard oil wax called Nature Gard.

I spent $33,000 refinishing my entire house with Rubio Monocoat Fume. Love the look. However the product is terrible and does not work. Within 1 week, my kitchen floors were spotting near the sinks. Water spots left on the floor discolored it. Prior to choosing Rubio, I read their product specifications and called their office in Texas. I read and was told that product can be used in kitchen. Wrong!! Spotting and discoloration after 1 week. Further the company does not stand behind their product. I will never use Rubio Monocoat again.

I have this product on my kitchen countertops, and I was experiencing the same spotting issue with water initially. After 3 or 4 months, though, water stopped leaving spots. I assume the product continued to cure? I RMC around my undermount kitchen sink, and it still looks beautiful, even 4 years in. I just had to get through the first few months of despair!
