Replacing UbaTuba Tile

Help! I am replacing the Gold Ubatuba tile in my kitchen from previous owner. The cabinets are light maple. The room is fairly large and bright with a large island. The granite looks good with the cabinets. It is actually very beautiful when the light catches it BUT I hate the grout lines. If the counter was was slab I would just leave it. Don't like quartz as it is resins and polymers, worried about etching with quartzite so it is granite. Love dark granite drama with light maple think Emerald Pearl bling but I don't know. Love Blues in the Night but I can't find now - Volga Blue is too grainy. Previous kitchen was New Venetian Gold that I hated from day of install for 15 years. It was picked from "builders board" 2 inch square. Thought about lighter counter and darker island but husband thinks it should be the same. Oh, and I like full granite backsplash. The floor is large light porcelain that looks like stone. Any thoughts and ideas?
