You can definitely prune that out. Use sharp pruners and make a clean cut just above the next bud set / node / limb on the branch. It will put new growth on and should recover just fine.
With fruit trees, you dont want a central leader on the tree, so encouraging lateral growth is generally a good thing. Makes it so you can reach the fruit when its time to pick! Good luck.

Something caused that damage. That's the first issue. I'd suspect deer because it looks like some of the leaves have been eaten. You'll need a fence either for each tree or the whole yard. If you don't take care of that the trees will face the same all summer.

Trim out the broken parts and let the tree regrow. Note: deer esp love tender new growth. If all you do is trim at least the deer will get a snack.

The top tree in particular is in need of corrective pruning. Without seeing the whole tree it's hard to give advice on that issue.

Becky, I had that happen to a small gala tree I planted in the ground. Unfortunately, the break was too close to the graft, so new growth is from the rootstock. I suspect mine was from a raccoon.
