I would plant the eggplant now as well. It will last all season and you will get a harvest until frost. I think the cucumbers will be more iffy. They are such divas. Can't take cold weather, can't take hot weather. Still if you have the seed, why not try.

Planting seed now is fine. How early you get a harvest just depends on what the weather does. Eggplant loves heat so I wouldn't hesitate to sow the seeds now and get a head start. You won't really gain anything by waiting until July. Those planting dates for a fall harvest are more flexible than the ones in Spring. I often plant earlier than recommended for fall and it usually pays off with an earlier fall harvest....so early that it often starts in July or August instead of September or October.

With the cucumbers, I've found they tolerate heat surprisingly well if both well-mulched and well-watered, so they're worth the risk to me....but only if I know I am going to mulch and water them. Otherwise, heat/moisture stress affects harvest and also quality as the plants cannot tolerate hot weather very well at all if they also are staying too dry. I also grow Armenian cucumbers for a summer harvest as they are more heat tolerant. Tecnhically they are a melon and not a cucumber, but if you harvest them small they can be used as a cucumber substitute. If I don't see one and it gets big and melon-like, the Armenian cucumbers aren't sweet like most of the melons we Americans eat, but our chickens love them. As it gets increasingly hotter in the summer, I start letting more and more of the Armenian cukes get big on purpose so I can give them to the chickens on brutally hot days.
