Update: We redesigned --- putting in a peninsula and moving the sink to the corner and the dishwasher will be under the window where the sink is now.

Then I'd start saving up immediately for a kitchen that would work. On your second picture there is a window or door to somewhere in the left bottom corner. If you would be able to get rid of that, you could place the kitchen in L-Form on those two walls.

Where the main part of the kitchen is now (in the opposite tiny corner), I would make a wall with a sliding door and behind it a pantry. Next to the entrance door, where the stove is now, I'd place a small table with two chairs that go underneath it.

Even on a budget it might cost less to move a pipe than to spend on cabinets and flooring for a space that does not work. Start with a sky is the limit list of what you would like then see what makes sense budget wise taking into account future plans.
