To me, it sounds good, but heavy on the proteins and starches, light on vegetables, and no fruit. I'd remove one protein and one starch and add some cooked vegetables and some fruit salad. Grilled vegetables are delicious and don't have to be served hot.

Depends on what a "tray" is.
Figure about half cup serving of pasta per person....and figure that most people will take some of everything.
I think you have too much variety....I would go with the penne and order more chicken parm and2 more sandwiches.....skip the meatballs and maybe the sausage and add another salad or vegetable dish.
