This article might be helpful to you. Yuri Panchul listed several dwarf sasanquas worth trying. My personal favourite is Shishigashira. The non-dwarf version is already quite small, has dense foliage and flowers profusely in autumn. It’s a good bonsai subject, too.

Sorry to jump back on this but.. can I prune a non dwarf camellua to stay at 5 ft. ? Or will that hurt it. I would be buying a 3 gallon so it it will tske time to get there anyway

You can prune a camellia to any size you want without hurting it. You can also achieve a better looking shrub via proper pruning. Early spring (and after flowering for spring blooming varieties) is usually the recommended time to do it. Camellia Sinensis, the green tea plant, for example, is sheared regularly to maintain a size that is easy to harvest the leaves.

Needless to say, if your intention is to have something that is 5' tall, then it will be more productive to find something whose mature size is not to far away from that number.

if a bright pink flower color will work, 'chansonette' might be a good fit for your site. i have seen it listed as c. sasanqua and also as c. hiemalis. either way, it has been a vigorous grower for me and tends to form a weeping shape, more wide-spreading than tall. you could control the spread by shaping. the flower also happens to be quite pretty. i read that it is a good candidate for a hedge or ground cover but i don't quite see it as a ground cover plant - it it not that prostrate.
