I wouldn't at all worry about matching the appliances. They are really a neutral. A nickel will look great. In my opinion, the choice of polished or satin depends on how much shininess you have and want. You said your cabinet hardware is polished. Are there other shiny surfaces? For example your lighting or backsplash (if you chose it already)? And do you have a lot of hardware or no? Personally I'm a fan of a polished faucet, so I'd probably choose that and then everything else should be either a different metal (such a black) or satin unless you are going for a blingy look.

Either nickel or stainless would work fine here -- most people don't notice the difference, even with a nickel faucet on a stainless sink.
