I use tomotoes in most of my cooking. I would like to know if I can process sliced tomotoes with skin on in pint jars. I know I need to add salt n lemon juice. Can anyone advice me pls n also processing time.
Hi Terry - the problem with sliced tomatoes is they fall apart during processing. They simply cannot stand up to all the processing needed.
So the options are canning them whole of halved (slice after opening) in water, tomato juice or raw, or canning them crushed, or juicing them. There are many other ways with additional added vegetable ingredients (ex: salsa, stewed, with okra or zucchini, etc.) but those are the options for plain tomatoes.
Since you will use them in cooking crushed is the most popular method - it's what sliced would look like after processing anyway. ;-)
Processing time required for pints all depends on which form and which processing method you use - pressure canning or boiling water bath canning. The required times vary substantially based on the density inside the jar.
