"sweet onins?"

Hi folks, I've been gardening a long time, have grown Walla Walla, regular onions, hard neck galic, leeks, etc. This year, "the one who must be obeyed" (:-) ) received two bunches of "Candy" onions from a cousin in Indiana, so I put out two fourty foot rows. Onions developed nicely, huge actually, decided to pull one yesterday and see what they tasted like. WOWSA! Was that hot!!! Tops are falling down, but still have some green in them. As I recall, high sulfur soils promote sulfuric acid which makes onions hot. My garden has been in use for about twent years and the previous mentioned aliums weren't particuarly strong. It's too early to harvest them, will let them mellow in the garden, then harvest and let cure/dry.

My queston is: will further time in the ground and curing tame the taste? Doesn't seem like it would, but not an onion Xpert.

Thanks for your time,
