5. Stairs and fireplace surround:

I'll take a stab:

1) Flooring, looks like maple. Also explains the sap streaks and black staining.

2) Cabinets. Spruce, what's sold up here as "whitewood".

3) Walls, white cedar perhaps? Smell test would prove. The lower wall could be some kind of fast-grown local cypress, or more obscure softwood. the darker patches around the knots could be an important clue.

4) Ceiling, Looks exactly like the spruce/whitewood car siding that every Home Despot sells.

5) steps, looks like red/aromatic cedar from here. Very distinct break between white and red wood, and very knotty. Usually used for fenceposts and lining cedar closets.
