I would leave it be until next June. It's apparently been through a lot.

Removing all of the leaves as you did likely depleted most if not all of its energy reserves. Without leaves, It had no way to make food for quite a while.

It hadn't been touched in 14 yrs, a friend gave it to me, but yes I really did a number to it, i'm just happy it survived. My long term goal is to get it to look more like the below pic. Could I go ahead and buy another stalk and add it to the current pot or should I wait to do that too?

I would wait until mid June when we have the longest days of the year. You'll get the best growth at that point.
