What to do after picking my tomatoes?

It's sadly the end of way-too-short summer here in zone 5b and while some of my tomatoes ripened on the plants and very tasty, most of them were still green.

After reading online, the heck with it and I harvested all of them to put it in a box (that I also used to check the cool eclipse (recycling)(message!)) with a banana to make them hopefully red quicker.

But now, my plants have nothing left. What should I do with them? Are there enough warm days to get new flowers for more fruits?
