Kitchen Island Counter Build-Up Question

Hello-we're about to template the granite for our new kitchen and it's been suggested to us that we should do a build-up on the island counter and leave the perimeter counters thinner. Can someone explain the benefit of doing this? The cost difference of doing so is significant. Thanks!

The build up of the counter edge makes the stone look thicker thereby making the counter material look more substantial. I do not know why they would suggest this for the island only.
