Cutting back ginger

Hedychium coronarium, specifically. I just let them grow for the flowers, when the flowers are spent I have been trimming the old blossom off and leaving the stalk, with the idea that it will continue to make food for the rhizome. Is this better than cutting the old stalk to the ground?
