To Peel or Not to Peel

I know that if you just cook up a bunch of tomatoes without peeling you will get big pieces of undesirable peel in your finished product. What if you wait until they are all cooked then use your immersion blender? I bought a bushel of the biggest, most beautiful Roma tomatoes. I've made another batch of Annie's salsa which sold as fast as the first batch. I used the blanch then ice to peel for these. I have five packages of ten each in the freezer and another batch freezing now. I know when they thaw, the peels will come off easily. I do have one batch on the kitchen counter that have a spot or two starting that I will cook up for me. I have so many things I have to can and bake for the farmers market this week so I wondered if I could just cut out the flaws on the tomatoes for me, cook them down then zap them. Opinions?
