I was so disappointed when first I learned that I could not can any tomato sauce I made. I also did not like the look of any of the recipes I saw. Therefore, I had been canning either crushed tomatoes or basic tomato sauce (p362 Ball Complete). This year I decided to trial five different sauce recipes: Seasoned Tomato Sauce (p364 Ball Complete), Italian-Style (p365), Your Basic Multi-Use (p227 Small Batch), Chunky Basil Pasta Sauce (p230 Small Batch), and Roasted vegetable Pasta Sauce (p232).

I decided to start with Seasoned Tomato Sauce minus the ground black pepper. It was delicious, but a little spicy for a wide audience. I am canning the my second batch right now minus both the black pepper and hot pepper flakes. It is just so tasty! I am not sure if I am going to get to the other three recipes.

Have you tried any of the other three sauce recipes I mentioned? Which do you love and why?
