Maybe if you told us what hasn't worked for you and why, that would be a good place to start. Honestly, as long as the soil drains well and the grasses receive the correct amount of sun for their species, any ornamental grass should do well in most z7b settings. They are extremely easy to grow and very undemanding plants.

Unfortunately I don't know which species didn't work.

I've read that there are certain grasses it's best to stay away from due to invasive issues, but my planting area is so large that is not going to be a problem.

I would check out Bluestem Nursery. They are an OG specialty nursery, mostly mail order, but with a website that is chock-full of info on a wide assortment of ornamental grasses for just about any situation. Some that I would suggest you look into would be Calamagrostis, Panicum, and Miscanthus for taller growing species, Pennisteum, Schizachyrium, and Carex for lower growing species.
