Flooring Design Dilemma Kitchens

Help with vinyl plank flooring

We would like to put new flooring in our kitchen and family room. He have already decided we want the floating vinyl planks. Our kitchen has sheet vinyl and the family room has carpet. We have gotten a few price quotes but each company tells us something different. So here is my question: Do we leave the sheet vinyl and build up the floor in the family room so it is flush and then put the new flooring over it OR do we rip out the old vinyl flooring and put the new floor on the sub-flooring?

Not sure how the vinyl flooring is thicker than the carpet? IMO I like to put new flooring over the bare subfloor in all areas but if this is an old house that flooring you think is vinyl could possibly be old asbetos flooring in which case do not disturb it jusy lay new floor over top.

The flooring is not thicker than the carpet. When we remove the carpet, there will be a slight step from the sheet flooring to the sub-flooring. We are trying to figure out if we should rip out the sheet flooring from the kitchen, or leave the sheet and build up the family room sub-flooring to make it flush.

I'm no expert, but if the vinyl flooring is in good condition I would leave it.
