Mudroom addition

We just purchased a home that had a nice large (but narrow) mudroom that was done as an addition to the back of the house. They did a pretty shoddy job but I would rather not tear it down and build a new one. There is siding on the one side with two window (one bathroom and one bedroom) and the other side is the wall of the addition with two windows lined up to the interior ones. It is also not heated. I want to convert it into usable space. Can I cover the siding with built ins? or should I remove the siding altogether? I'm afraid that if I remove it, there will be gaps in the corners that will pose another issue. I'm at a loss on this one.. help!!
