Depending on budget really, If you're looking to stay with Granite.. I would have to say Giallo Ornamental. Not too expensive and a nice look to brighten up the kitchen.

you haven't given a budget or whether you want granite or quartz. If that's all your countertop, I would look for a 1/2 slab remnant or a pre fab countertop. much cheaper. I like the black w/your terra cotta flooring.

this Honed Virgina Mist granite would look good

if you did the black, you could do some cool black and white cement tile for the splash. black and white and terra cotta looks great together

or something like this Casablanca Quartzite. has the coppery tones but also the silvers to pick up on the SS appliances.

stay away from blue grays or beige grays. a solid white counter would also work, and allow you to jazz it up w/a cool backsplash.

Keeping the flooring in mind, it would be a good idea to take a sample with you of it while looking for a granite/quartz countertop to go. You should be able to match it, it just depends on what your budget it. We've included a few of our kitchen designs below to help as well.
