When to Harvest?

Hey guys,

After a failed attempt to grow citrus, the meyer lemon tree produced one lemon and later died of root rot, I have been stockpiling more citrus! I have two meyer lemon trees that have two lemons on each, and they are starting to yellow. On my original tree, the one that died, i left the fruit on until the skin cracked open. I think it was left too long and the juices kept on flowing in! Now I don't want to pick an unripe lemon, or pick an overripe lemon either. How do you guys tell if the lemon is ripe or not?

Also, do you guys flush the soil with plain water a week or two before harvest?

I have a picture of the most ripe lemon of the 4 growing to give you guys an idea of where I am at. Thanks for the help!
