Both of those are too warm IMO.I like 5000k in a kitchen it mimics bright sunlight and keeps all the colors from looking yellow at night.

I'm not a lighting designer, but from my experience, try to match the color temperature if you can. It might not be noticeable because the undercabinet lights will be affected by the counter and backsplash colors whereas the recessed downlights would have a different reading. We generally try to use the warmer color temperatures.

It's doubtful that you could get sufficient lighting from the undercabinet lights alone with no other light source, and it would be kind of spooky :).

5000k looks too blue to me. I like 3000k. I mix 2700k and 3000k without issue.
