Kitchen redo (White with white granite countertops)

We had a flood in our kitchen (faulty refrigerator) and unfortunately we are having to redo the whole thing. I am not very good at design and so to be honest, I find it all very intimidating. The previous owners had cream cabinets with black granite and a black island with red granite. We decided we wanted to replace it with something a little more timeless. We decided to go with a white kitchen with white granite. We are hoping to create a bright clean kitchen. We are looking for advice on what granite we should use for the countertop and what backsplash we should use.

I have looked around and I am leaning towards bianco romano supreme. However, Colonial white and river white are also pretty. I am leaning towards bianco romano supreme because it is less gray then the other two. I am not a huge fan of gray. Has anyone used this combination? Do you like it? Does it create a clean white kitchen look? Also, what backsplash would look good? The man at the tile store recommend Manhattan polish marble (which is pretty) but I was not sure about mixing granite and marble. Will that look OK? Thank you so much for your advice.

P.S. I did look at the quartz that looks like marble, but for some reason I prefer granite to quartz.
