The wall is so asymmetrical, I would just do the same height of backsplash under the double cabinet from the right side corner to the left. Where the wall is just inches high continue to the end. I would not go up around the hood itself, because there is not natural place to stop.

There are three windows. We will be tiling to the left and right of them but not between them. We will be tiling under cabinets on third wall also.

I would go up to top of cabinet on right of hood and around and up beside windows following line at ceiling break. You have that opening to left of hood and that lines up with cabinet height.

If I were you I’d look here on the discussion regarding the new rugged concrete from Caesarstone. Huge disaster it sounds like. It was just in the last few days.

And to answer your backsplash question. Why not put up blue tape all the way around and repost picture. If it were me I’d align w horizontal window mullion and carry that consistently around (so there would be some drywall between the tile and hood). See what that looks like. And hope you can get some clarification / reassurance / or a change on the rugged concrete.
