Yeah having brick as a backsplash behind a stove isn't a good idea. You'll need to put something over it, like a stainless steel panel, so the wire can be run behind that.

If the cooktop is gas, and there is some risk of the backstop getting hot from impingement by the combustion plume, plan on insulating the cable from the backsplash or using one rated for the hotter conditions, preferably one with more copper crosssection than required by the actual blower load. (I.e., confer with your electrician.)

For a flush backsplash, you will need to saw (dado) a slot in the brick.

Second what kaseki said. Cut a notch in the brick, running the line up from the basement. Cover it with a decent backsplash (stainless steel, tile, etc.). Brick is not good as a backsplash unless all you do is boil water. Too difficult to clean.

Find a different location for the range rather than an uncleanable porous nightmare with no proper infrastructure.

We had to run a conduit for ours I have quite a contemporary house so I don’t really mind the pipe and I happen to love my stove on the stone wall everything on that wall is moveable so a couple of times a year I scrub the wall takes 1/2 hour

Moveability surely helps make cleaning less impractical, but care is needed (perhaps with proper sealing) to keep water from creeping where it is unwanted at the stone/floor interface. The coarser the surface, the deeper the brush has to be and the more water transferred to the surface that can run down.
