    We could build the pool itself, but I would have to look into whether we could source the pump(s) needed to make the water flow.

    I can use whatever you like. I can use plywood or solid wood; your choice. Depending on the type of wood you are looking for, there may not be much difference in price to use solid lumber. Here is a tub we did in solid Cypress, 7' x 7' x 42" deep.
