Ever forgotten to add eggs?

I made banana nut muffins this evening. They'd been in the oven about 10 minutes when I realized I had forgotten the eggs. Finished baking them, let them cool. My husband decided to try one. A couple are not completely domed, but they look and taste fine. I can't believe it.

    Yep....eggs and sugar and salt and vanilla....some omissions turned out better than others.

    Yes. Only after I put the pan in the oven did I notice the eggs were still where I had put them to get to room temp the night before.

    After the cake was baked, I went ahead and baked another one with the forgotten eggs. Truth is neither was anything to write home about, but for some reason the eggless version was better.

    I forgot the egg in a cookie recipe once and the cookies tasted OK but they were very crispy.

    I just made a bar recipe with an oatmeal topping for both the crust and topping (put jam in the middle) and noticed it was essentially oatmeal cookie recipe without the eggs. So that would make sense that it is drier without eggs (which would help in that situation). Maybe your muffins will dry out just a bit quicker, but sounds like it worked out ok! I have forgotten eggs (and many other ingredients) before.

    I never use eggs in muffins. To me that’s the main difference between muffins and cupcakes- muffins don’t have eggs, cupcakes do.

    I think all my muffin recipes call for an egg -- possibly two. One I have made has the eggs divided and the whites whipped. Well, it this batch would dry out faster, I doubt anyone will notice. DH took them to work this morning and I expect they have disappeared. There was enough ripe banana for them to not be dry now, but what surprised me was that they rose and didn't fall. I would have expected the eggs to contribute more to the structure. They may not have risen quite as much as they would have with the eggs -- hard to know without a side by side.

    I will add the eggs for the ones I take to my son. I don't want those to dry out and since he will grab and go with those, he can use the protein.

    I think the banana could take the place of some of the eggs, just as applesauce takes the place of some other fats. I have muffin recipes that take eggs, others that don't, but usually the ones without egg have another "fat" ingredient, like oil or milk.

    That said, I forget ingredients all the time. I usually go through my recipe at the end, before batter goes into the pan, and check off all the ingredients to make sure I didn't skip one, kind of like sleevendog's prep, except I don't gather everything before hand. Most things are still edible, but not exactly the same, like forgetting the salt in bread.

    I'm also bad about forgetting things in the microwave, the sweet potatoes always seem to be forgotten at holiday meals and last week I made a rhubarb tart. My brother came in with a tenderloin that needed trimming and vacuum sealing and the tart spend 2 1/2 hours in the oven before I remembered it. Of course, I had also forgotten to set the timer.....

    Yep -- done the salt and the bread thing. And a side dish in the microwave, but the only thing that really gets people upset is bread under the broiler. That changes in a flash and there is always something else happening or someone asking you something..... I remember the same thing happening in my mom's kitchen. The only sure thing is to assign someone to not leave the oven no matter what happens.

    LOL, that's because hot garlic bread is better than dessert. And you used all the French bread making it and the entire loaf just got incinerated. Not to mention the butter and olive oil that also just went up in flames...

    Can't tell you how many times I've burned the garlic bread.

    Until a Pizza Pizzazz (rotating pizza cooker/ broiler) entered my life. Though technically not impossible to burn the bread with a Pizza Pizzazz, it's tougher to do because it's right there on the counter top. We wore one out and had to get another. I keep a back-up (bought from yard sales because they're kinda' pricey for just making frozen pizza & garlic bread) stored in the basement.

    And then there's the time I was making those buttermilk angel rolls, and people were eating them as fast as they came out of the oven and I wanted to have some for the table, so I kept shaping and baking.....there were lots of "kitchen kibbitzers" that day.
    A couple of weeks later, I turned on that oven to preheat ( i have 2 ovens), and after about 10 minutes I smelled "something" and there was a pan of charcole briquettes on a pan in the oven. Some "helper" had turned the oven off without removing the last pan of rolls.
    another time I self cleaned an oven with a forgotten baked potato in it....smoked like a chimney!
    Eggs in muffins are not the only thing to be forgotten.

    Absolutely correct that more often than not, if you burn the bread that was all you had. Major upset -- especially when the boys were growing and the only way to fill them up at dinner (esp after marching band practice) was to feed large quantities plus bread.

    Oh no on the rolls! That would be as bad as the broiler. Maybe worse, because it was homemade bread. They get that too, but not always for garlic bread.

    The thing that blew me away about the eggs in the muffins though was that no one would have known that anything was missing. I'm not sure even I would have.

    The thing about the muffins is that baking powder plus wheat should give adequate structure not to have a hockey puck, and the bananas work as the glue. :) I've forgotten the baking powder but not the eggs, in a small cake, and that turned out flat and dense--and delicious as a bar cookie. :)

    Oh, I had baking powder that had gone bad when making the same recipe in a loaf. Talk about the glue factor! Never really thought about bananas as glue before, but when baked, apparently so. I was expecting something more like that without the eggs. I know how eggs puff with heat, so even with baking powder, I didn't expect as much rise -- or for them to hold it. But they did and that's good to know.

    Yes. I make them occasionally -- usually in the spring with berries. And they do have an egg.

    I am allergic to eggs, but I will have you know, banana is a good egg replacer, so that is probably why you turned out safe forgetting one.

    I had a pecan pie ready to go in the oven one holiday when I saw my two eggs still on the counter. Pecans in the mix and artfully arrange over the top too. I poured the shell contents into a bowl as best I could and added the eggs, poured it back - not as pretty. But no one complained.

    I see this is an older thread but always relevant. Can’t recall forgetting eggs but definitely other things. I once made a batch of my pumpkin bars. Pulled them out of the oven and the batter looked like wet foam. What on earth🤷‍♀️, especially after making them a zillion times. Then I noticed the baking soda can still on the counter. Amazing the difference omitting a small amount of baking soda can make to a 15x10x1 pan of batter. Tossed the foam and started over. What a waste of ingredients.😞

    Oh, yes I have! I forgot to add eggs to a chocolate cake batter and the cake looked fine, but it was so obviously lacking in something when it hit the taste buds. I was so surprised at how the cake structure didnt give it away. The mouth feel sure did!

    Another time I missed the egg in some muffins and the result was so pleasing that I actually went ahead and named it for its forgotten egg , wrote down my "new" recipie and I quite like it.

    Both times I was surprised by the fact that the structure of both was still there without the egg.

    Just done the banana muffins and found the egg on the counter - waiting for it to come to room temp! Mixture still in the oven - fingers crossed but encouraged by oyur comments.
