Bull and a Big Green Egg is all anyone should need. Plus ventilation if it’s under roof.

I think it depends on where you live, your budget and your lifestyle. In CA we had a built-in Lynx with a infrared rotisserie, plus a big green egg. In ME we have a freestanding DCS with infrared rotisserie so we can move it out of the snow, plus our big green egg. We use the rotisserie for turkeys and they come out great! Grills are another big appliance and can be very costly.

We are in Maryland with rain and snow. It will not be under roof.

Kamado Joe. We don't like gas grills. We have both a classic and a little joe and thats all we need. We made tables for both which have wheels so we can easily move them. We have a rotisserie for the classic. We can grill and smoke. Pizza comes out great.

I have moved onto wood pellet grills such as a Cookshack PG500 or PG1000. I feel the food is much more flavorful than a gas grill. You can smoke, bake, sear, with this type of pellet grill.

Thanks, all. We definitely want a gas grill, we have the line already run. The question now is what type? We *really* want to build it in, but I'm nervous about having to replace it.

I don't think you need to worry about replacement on an outdoor grill anymore than you do for an indoor range. If you stick with standard sizes, you should be fine. We just installed a 36" Lynx, which I'm assuming could be replaced with any other 36" grill should it need replacing. If you don't like the builder's choice, supply your own.
