Could a flooring professional or someone who is very familiar with finishing floors tell me the step by step process to pickle a floor?

I am trying to create an old looking floors in my new home. I chose a 2 common white oak wood. I also chose stain that is typically darker than you would see on most pickled floors (ebony 50%/ classic gray 50% minwax). Now that they are applying the stain on the floors, it looks MUCH darker than the samples I was shown. I also noticed it doesn't seem like the stain is being wiped off right away like I would traditionally think pickling is done. Would love some feedback!
