IMO stainless is timeless easy to care for and is always my choice for sinks.

Copper has a living finish, unless it's coated and sealed, so it will be a constantly changing blended finish, it's a quirk that brings a lot of people to copper but if you're not expecting it, it's a feature that can drive you crazy. The advantage is the color can always come back, copper never loses it's luster.

Depending on the manufacturer, fireclay sinks should be dense and glazed which makes it scratch resistant and impervious to stains. It has the look of porcelain without the fragility.

Stainless easy to care for and practical plus a huge variety and choices

composite granite, it can stain and brake, chip

Fireclay nice look, not many choices,

Cast iron, nice if you are doing a white sink with white counter top. drawback is they are loud. and enamel finish can be damaged

Natural stone, great unique look, like nothing else, but it can chip/ stain and it requires more care

Quartz is an option for the integrated look if you are matching with the counter

seamless, but it can discolor with water, it also has a big price tag

Solid surface : integrated look but pricey

Copper, great look, requires maintenance, and choices are limited

So it sounds like Stainless is probably the best one for easy maintenance and durability! Thank you everyone!

Soap stone is supposed to be an amazing sink material.
