Smaller Countertop Overhang for Inset Cabinets

My new kitchen cabinets are inset and I am getting quartz countertop. However, because the doors are inset and there are no additional door panels over the cabinet face, I wanted the overhang to be smaller, like only 3/4", to have a more transitional look. The quartz countertop comes in 3/4" slabs so the edges will be mitered to achieve a 1.5" thickness look.

My contractor is telling me that it is not possible to have an overhang less than 1.5". Which means the countertops will come out 1.5" more than the cabinets. He says the only way that can be done is if I buy thicker slabs that don't need to be mitered. Is this true? I don't think I usually see countertops jetting as much as 1.5" out of the cabinets, and am surprised that everyone who buy 3/4" slabs are stuck with these umbrella-like overhangs.

Can someone please tell me if this can be done and how it's done?

I am a fabricator. A mitered 2CM (~3/4") edge would be at least 7/8" OH, more likely an inch or more. This is because the vertical miter piece is still the 3/4" thick material meaning even if it is right against the cabinet the horizontal piece must project 3/4" [ast the edge of the cabinet to make the miter joint. Normal practice would be to leave a least a bit of room between the back of the vertical piece and the cabinet face. 1-1/2" overhang seems a bit much. 3CM (~1-1/4") with no miter could have a reduced overhang; the min we do is 3/4".

Stop in at a nearby local big box building supply store and look underneath the front edges of the cabinets. That will help explain why there is an overhang.

Custom building something different would be costly and, possibly, unwise -- there are usually good reasons for the ways things are designed.
