I think the best/easiest swap for a single florescent fixture in a kitchen is a track light.

Make sure it's LED, though. We swapped for track lights with halogens and they put out way too much heat.

And make sure the fixture is white. This is not a something you want to stand out in your kitchen. it needs to blend in and disappear as much as possible.

How about two of the George Kovacs LED flush mount fixtures? The put out a ton of light and come in a variety of sizes. Also, consider some undercabinet lighting for additional light out put in the kitchen.
