Kitchen Renovation and Layout Help

Hello! My husband and I are in the process of purchasing a new home and will be doing a full remodel on the kitchen. It is a very small house (approx 1250 sq ft) and with the current kitchen layout there is no dining space at all (only bar seating). We would like to have space for a table that fits at least 4 (preferably 6) and a kitchen with a sufficient amount of prep space. Since we are gutting the kitchen, we can redo the configuration entirely. Here is the current layout

One of our options in fixing the configuration is to remove the coat closet and close off the hallway next to the range

What else would you do to fix the configuration? Would you remove the peninsula and try to fit an island? Should the dining table go in the middle of the kitchen (eat in kitchen style) or up against a wall? We are open to any and all suggestions!
