opening a doorway- To trim or not to trim?

Hello we are planning to open this doorway in our kitchen to our dining room about 16 to 18 inches. I am looking for suggestions on how to finish the edges of the doorway? We thought about removing the trim all together so that we could open it wider with the limited space we have and I figured maybe we would arch the doorway but it seems easier to keep the trim. And on the dining room side the we actually like the trim. Does anyone know if is totally weird to have trim on the dining room side and no trim on the kitchen side? Or is it possible to just basically start the trim from the top of the counter top?

So guess here are my options.
1. Remove all trim arch doorway
2. Have the trim only about an inch thick along the cabinet and then start the full 4” trim at the top of the counter and keep a longer version of the header.

Any other ideas?
