Tile, Stone or a stainless steel panel would all work well depending on the look you want.

I have read on this forum that tile does not make a fireproof backsplash - the heat can go right through the tile and affect the flammable drywall / studs etc. Most of the slide in ranges have a heat shield, which I think is a sheet of steel, to go behind the range. Ask about it when you purchase the range / stove.
