How big of a stem can you root

My largest plumeria got hit hard by the freeze this year. It was almost 12ft tall. Everything but the 3 main stems is dead, I am getting new growth on a piece that is appx 3 in in diameter, but is 7 ft in the air so I want to cut about 2 ft below that to have a chance on a nice shaped tree. Will this 3 ft piece root with out much trouble ? She is an easy to root plant, but I have never rooted anything this big.

Anything special I should do ?

Also the top is open, should I cover the hole ?
