Ignore the wall measurements on drawing, they are not all correct.

On the current lay out, there are these double closets in the living room that I hate because the room literal has no wall space, so I want to close those off and remove the wall in the back of the closet to widen the Master bedroom. On the other end of this 30' wall is a pantry and the back of the master closet butts up to it. I want to remove this end of the wall so I can put in a large french door with 2 side panels. The space that is there now is only 102" with a single back door and window there. The only thing that got me worried is the ceiling line, in the living room/kitchen dining room it's all vaulted ceilings, so removing this wall 3' back will give me a lower ceiling. (it's a weight baring wall so I do not want to mess with the trusses) Am I crazy for wanting to do all this for a large window back door? (no lighting in this big room... 30x26 feels so closed off

how complicated is it to go from vaulted ceilings to the little 3' nook i'm wanting to do. I am good at sheet rock, walls..... that is... but never have i tried my hand at moving a wall to where it messed up the ceiling. I'm also wondering what are the chances I'll have to paint the whole vaulted ceiling when I do this.... something I wont even consider myself.
