I love your mess. So much potential in a good mess! Looks like you've got a basic galley kitchen, so layout should be simple. Decide the best sink placement first, then make a triangle with sink, stove, and fridge. Be aware of how much space is needed to move around when appliance doors are open. Are you looking to keep a particular period or style? Difficult to judge the age of the house from the photo, 60's maybe? First thing I'd want to know is what's in the bulkhead. If it's empty, take it down. If it's hiding ductwork or plumbing, then you basically gotta work around it. I'd keep to a simple, flat panel (or even slab) door style, light wood or painted. Heat and scratch resistant counters make cooking a lot easier. Quartz has some good options. The floor seems to be in good condition, I'd keep it and put down a runner. Color is a personal choice, can't help much there without knowing you, good luck!
