Odd laundry area, help!

We moved to a house with an odd laundry area. on one side, it has the front loader washer and dryer, with cabinets on top. The house's only guest bathroom is right next to it, but it's just a toilet, and outside of it is this area, which used to be an old vanity with a small sink. We took it off to redo the floors and now want to put a utility sink that doubles as the guest bathroom sink.... see the picture for the area where the vanity was.

The area is 31.5" wide, yet the sink we like (and consider to be a decent price) is only 24" wide. I think we should put tile from where the ugly green one is, all the way to the floor to protect the walls from splashing. Do you have any alternative ideas? If you've done anything like this, could you share pics please? We don't want to spend a fortune on this space, but do need a utility sink and not a small bathroom sink.
