Help with kitchen renovation

Help! I am usually a very good decision maker but this kitchen thing has me stopped in my tracks. We live in a small 100 year old carriage house. We are redoing the first floor and moving the kitchen. I have been debating 48” dual range, 36” dual range with speed oven or wall oven. If I do a wall oven I would opt for a gas range - Blue Star or Wolf. I love to cook and really love to bake. This is the first run by our cabinet/kitchen designer and assumes a 36” range plus speed oven (would be Wolf range with Miele speed oven). The mud room will have pantry space. The dining room will be contiguous to the kitchen with a built in to resemble a piece of furniture on the wall close to the dining area. Thinking of white cabinets with the cabinets on the island being a deep blue. I am beyond confused and conflicted. I don’t want to make a bad decision. Please help!

Are you asking for help with color or cabinet placement? You really haven't asked a specific question.

You should consider editing/cropping those images. They have personal info on them you may not want on a public forum.

Design question mostly tho I am really struggling with all the decisions - color and appliances as well.

Have no clue how to edit the post/photos to remove info.

I'll post the whole house, so you can delete it in your comment above.

Did the architect provide you with an "as-built" drawing? It would be helpful to see your starting point since you're moving the kitchen.

Just regarding the question about 48" range vs. 36" (your other questions are too broad for me), keep in mind the exhaust requirements. A 48" range will need a hood that is 48-54" wide. Are you prepared to: (a) forego that upper cabinet space, (b) pay the high cost of that size hood, (c) pay for and install a makeup air system that the 48-54" hood's cfms will require?

You should also replace some of those base cabinets with base drawers.

What are those narrow cabinets on either side of the range? Not spice pull-outs I hope?

It is a bit difficult for me to read the plans on my phone's screen. Does Elevation E show a fridge against the wall? If it's a single-door fridge against the wall, make sure the door hinge is on the opposite side from the wall or you won't be able to open the door fully. If it's not a single-door style, you won't be able to fully open the door that is against the wall.

Benjesbride...thank you so much. Still can’t figure out how to delete that drawing since it is attached to my main comment/ask for help. I don’t have the as is drawings with me. As for the question about the vent...you are right. With the 36” range we will do the larger air removal system but a smaller vent will be installed which will save space above. Think we will go with the vent-a-hood. Yes to the bottom left of the stove is a pull out spice cabinet, bottom right is a pull out with containers for utensils. The comment was “I hope not” with regards to a spice cabinet. Y not?

Fridge is against the wall. Sub zero with French doors. My contractor assures me that I will be able to open the door..

I think the fridge, as drawn, could be a problem unless it's the integrated kind with special hinges, but even then. There are quite a number of posts from people realizing this about fridges next to walls, too late.

Here is a thread on the topic for you to read: [Thread called "pullouts next to cook-top"[(https://www.houzz.com/discussions/pullouts-next-to-cook-top-dsvw-vd~3866883)

I prefer a drawer next to the range for spices with Rev-a-Shelf spice drawer organizers. Here is a pic of Cat_mom's.

Thank you all for your comments. Thoughts on 36” range plus speed oven vs wall oven for someone that loves to cook and bake?
