Spaghetti squash bitter and seeds sprouted inside

I've had some good success the past few years growing spaghetti squash, and this year we had another good harvest (picked them by early June). They have been sitting in the pantry. The problem I had is that many of them had seeds which had sprouted inside them, and they had a bitter taste. I wonder what happened? I also noticed they didnt have the nice "noodle" structure as much, but broke up into small pieces when cooked, instead of the nice long noodle structure.... Anyone seen this before? Maybe I didn't let them ripen enough on the vine?
