How to "patch" granite backsplash

We moved into our 30-year old house one year ago. The kitchen is a nice size and the granite is okay but I wanted to replace my white appliances with stainless and my electric range with gas. What a can of worms! I removed the upper cabinet and white hood, which was too low and wish to replace it with a stainless hood with chimney to the ceiling. The vent has to be moved and the side of the cabinets refaced and my contractor assures me that is doable. However, the granite back splash (which was installed over the previous tile back splash) is 22" high and the hood is being installed at 30" so there will be about 8" between that needs to be addressed. I am not sure what to do. I do not think a completely different type of tile above the granite would look very good and wondered if I should "patch" it with a sheet of stainless steel? I welcome ideas because I am totally stumped.

This is Before. . .
