When seedpod is ready?

I have few nice seedpods on my Sally and Bob, Galaxy, CTG and Neat Splash. Last year I waited till seedpods started to get dry and furry rats likely trashed a few.
How long is long enough before I can safely remove them. My other thought is to cut entire stalk and put it into water indoor to see if it ripens some more.
