kdavis - You could do either of your suggestions, but the former 1/3-1/3-1/3 configuration is best if you want exactly even pools of light distributed on the counter (if they are down lights), as it will evenly space the pendants over the island. The latter configuration (really 1/4-1/4-1/4-1/4) will work too, but it will just cluster the pendants closer together by drawing in the two outer fixtures closer to the center fixture, and the pools of light on the counter will thus be further inboard from the ends.

In any case the center fixture will be centered over the island, so you can mockup the positions of the flanking outer fixtures to suit what moves you. In actuality, your eye won't really read how they are spaced over the counter, but will read that they are equidistant between each other.

Another thought, go with just 2 pendants instead of 3. Three 8" drops might be a little over scaled, but your call.
