I should add we are concerned that to fix the elevation the pavers will have to grade away from the house then up to the pool...creating a valley in our back yard. Yike!

We have been waiting to confront him with this issue until we have an official report from a licensed civil engineer. None of the yard was really graded prior to putting the pool in to begin with. Sigh. So if decking was put at the level it needs to be to level with the pool coping, it would cover the weep screed of the house about an inch. Ugh.

It would be helpful if you add a picture that shows the conditions of which you speak. It should include the house and the pool and be taken transverse to line of the slope, so we can see across grade, while you hold the camera level.

As noted, photos would be helpful. Distances between pool and house as well. Pool size, patio size, etc...

I ALWAYS cover and clarify elevations with my clients before we excavate so they understand the finished grades. It's in our contract also and they sign off agreeing to the finished grade.

Elevations are usually backed up with a grade plan from a civil engineer. Most towns require this anyway.

I'm sure there;s a way to resolve this with some drainage swales and catch basins to wick water away from the house and the pool.

Start by asking your contractor what's going on instead of guessing at their thought process. Beyond that, it's hard to say what's going on with a text description. BUT think of it like this - you want to shed water away from the pool. You also want water to shed away from the house. Those goals are often in direct conflict with one another. One way we handle that is with a channel drain at the low point, which is the simplest because it doesn't require compound slopes. Or we'll do one or two floor drains, and create almost a gentle "basin" slope to each drain. I have to think cutting the bond beam down is the absolute last thing anyone would want to consider.
