Flat or Eggshell Walls? When to paint?

We upgraded our new build to have Level 4 (up to 10% imperfection) smooth walls. We upgraded the paint from standard builder off white to SW white flat.

For one of the guest rooms, I would like to paint it an ivory cream color then add in white crown molding and wainscoting. Two questions:

1) Would eggshell or satin look nice? I know our walls aren’t level 5 perfect for high gloss, but they are smooth and without obvious texture so I’d like to show that off in a room. What’s he appropriate gloss level?

2) It’s a new build so freshly painted. How soon is too soon to paint the room? I’ve read on here of curing issues causing peeling paint or something, etc. (Not sure what kind of paint they had. Just made me wonder if there is a fresh paint issue??) I’m not savvy when it comes to home stuff. We would use SW paint, and the walls are currently SW.
